It’s our award-winning gin rested in first fill Croatian and American oak barrels. Botanical ratios have slightly changed but we still use 6 Croatian handpicked botanicals from the Mediterranean and continental part of Croatia.

After distillation gin rested in five different barrels. They differ by volume, type of oak, toasting/charring levels, preparation… each giving its own signature and complexity to the final spirit.

American oak gives us sweetness, vanilla, and smokiness at the back while Croatian oak builds pleasant bitterness and dry fruit.

Barrel Aged Old Pilot’s Gin is perfect in cocktails usually mixed with whiskey as the border between whiskey and gin fades away.
